Water Chestnut is rich in essential minerals such as vitamins, magnesium, copper, iron, phosphorus, potassium, and more.

Water Chestnut contains 68.52% water, 18.75% starch, 2.25% protein, 0.19% lipid, pectin sugar, and salts of calcium, phosphorus, iron, as well as vitamins A, B1, B2, C, and an active substance called puchin, which has antibacterial properties, lowers blood pressure, and helps prevent cancer, especially lung cancer.

Effects of Water Chestnut:

Clears heat and detoxifies the body. It can be cooked with green bean powder to make sweet soup or stewed with pig's stomach to clear heat, nourish, and detoxify. It can also be consumed in powder form to cool the liver, stomach, and intestines.

Notes for using Water Chestnut:

Choose firm tubers that are not soft.
When peeling the outer skin, use a sharp knife to cut off the top and bottom of the tuber, then cut around until all the skin is removed.
Water Chestnut can be stored for 2-3 weeks with the skin on when placed in water and kept in the refrigerator. However, once the skin is removed, it can only be stored for 2-3 days.
Raw or cooked tubers, with or without the skin, can be frozen and stored for several months.
